Sauteed reindeer, called Poronkaristys, is a delicious and famous dish in Finland. Outside of the Nordic countries, reindeer are known as Santa’s little helpers. In Finland, reindeer are a common source of protein. Reindeer tastes great, and it’s sustainable, too. The steak or back of the reindeer is thinly sliced, fried in fat, spiced with salt and pepper, and cooked in water, cream, or beer until tender. This Finnish cuisine is then served with sugared lingonberries, mashed potatoes and cucumber pickles. Like all game meat, reindeer has a strong flavor and low fat content.
